This mash up is a good source of protein and an excellent source of omega 3 fatty acids. It can be served on toast, or try a bread alternative like quinoa bread, or chickpea flour bread.
Ingredients:
1 medium avocado
2 boiled eggs
2-4 TBSP of finely chopped red onion to taste
1/2 tomato finely chopped
Cayenne, salt and pepper to taste
3 TBSP olive
2 TBSP tahini
Instructions:
Mash avocado and eggs in a bowl with a fork, add all other ingredients and mix well. Serve immediately to prevent oxidation of the avocado.
